Black & White Chip Coffee Cookies

Ingredients

  • 1 ½ C flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 ½ tsp. vanilla
  • 1 tsp. instant coffee granules
  • ⅔ C unsalted butter
  • ½ C Pioneer® Golden Light Brown Sugar, packed
  • ½ C Pioneer® Sugar
  • 1 egg
  • 4 tsp. regular coffee grounds
  • ½ C white chocolate chips
  • ½ C semi-sweet chocolate chips

Directions

  1. Preheat oven to 375° F. Lightly grease baking sheets or line with parchment paper; set aside.
  2. Sift together flour, baking soda and salt; set aside.
  3. Mix the vanilla with the instant coffee; set aside.
  4. In a large mixing bowl cream the butter and both Pioneer® sugars until light and fluffy, scraping the bowl to blend the batter evenly. Add the egg, coffee/vanilla mixture and the regular coffee grounds; beat together for 1 minute. Beat in the flour mixture until well blended. Stir in both the white & chocolate chips with a wooden spoon. Drop by scant tablespoons about 2-inches apart on to prepared pan.
  5. Bake for 12-14 minutes. Remove and cool on wire rack. Store in an airtight container.
