Barbecued Beans & Meatballs

Meatball Ingredients

  • 3 eggs, beaten
  • ⅔ C milk
  • 2 T instant minced onion
  • 3 C soft bread crumbs
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 lbs. ground beef

Bean Ingredients:

  • 2 cans (31 oz.) pork & beans in tomato sauce
  • 1 can (28 oz.) tomatoes, cut up
  • 2 cans (12 oz.) whole kernel corn, drained
  • 1 can (8 oz.) tomato sauce
  • ¼ C Pioneer® Golden Light Brown Sugar, packed
  • ¼ C light molasses
  • 2 T prepared mustard
  • 8 smoked sausages, fully cooked
  • 2 C american cheese, shredded

Meatball Directions

  1. Preheat oven to 375° F.
  2. In a large bowl combine the eggs, milk and onion. Let stand 5 minutes. Stir in the bread crumbs, salt and pepper. Add ground beef, mix well. With wet hands, shape the mixture into forty-eight 2-inch meatballs. Place in two jelly roll pans. Bake, uncovered, for 20 minutes. Drain away the grease.

Bean Directions:

  1. On top of stove in a Dutch oven combine pork & beans, tomatoes, corn, tomato sauce, Pioneer® Golden Light Brown Sugar, molasses and mustard. Bring to a boil.
  2. Cut the sausages into thirds. Divide the sausages and cooked meatballs between two 3-quart casserole dishes. Turn half of the bean mixture into each. Stir to combine.
  3. Bake uncovered for 1 ½ hours stirring occasionally. Sprinkle with cheese and bake until the cheese melts (2-3 minutes).
