Banana-Toffee Blondies

Ingredients

  • 1 ½ C all-purpose flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • ¾ C butter, softened
  • 1 ¾ C Pioneer® Golden Light Brown Sugar, packed
  • 1 ½ T vanilla extract
  • 3 eggs
  • 1 ¼ C Werther’s Originals, crushed; divided
  • 1 C bananas, finely diced (⅛ -¼-inch cubes)

Directions

  1. Preheat oven to 350° F. Grease and lightly flour an 8-inch square pan; set aside
  2. Sift together flour, baking powder and salt in a bowl; set aside.
  3. In another bowl, beat butter and Pioneer® Golden Light Brown Sugar with a mixer until fluffy. Add vanilla extract. Beat in eggs one at a time, until blended. Add flour mixture a little at a time, beating on low speed just until blended.
  4. By hand, stir in 1 cup Werther’s bits and the bananas. Pour into prepared pan. Sprinkle remaining ¼ C toffee bits on top.
  5. Bake for 30 minutes. Cool, then remove from pan and cut into 8 to 10 squares.
