Baked Carolina Barbecue Chicken

Ingredients

  • 4 boneless, skinless, chicken breasts
  • salt & pepper, to taste
  • ¾ C Pioneer® Golden Light Brown Sugar
  • 2 T vegetable oil
  • ½ C yellow mustard
  • ¼ C cayenne pepper sauce or hot sauce
  • ¼ C cider vinegar

Directions

  1. Preheat oven to 350° F. Grease a 2-quart casserole dish; set aside.
  2. Salt and pepper chicken (to taste) and place in the prepared pan. Place in the oven and cook until internal temperature reaches 150° F.
  3. Meanwhile, mix together Pioneer® Golden Light Brown Sugar, vegetable oil, mustard, hot sauce and cider vinegar in a sauce pan. Heat over medium heat stirring frequently. Once the sauce reaches a boil, reduce heat and simmer.
  4. When the chicken reaches 150° , spoon ½ of sauce over the chicken. Continue baking for another 5-10 minutes or until sauce is baked on. Use remaining sauce to pour over chicken when serving.
