Apple Pie Squares

Ingredients

Crust:

  • 3 C all-purpose flour
  • ½ tsp. salt
  • 1 C shortening
  • ⅔ C cold milk

Filling:

  • 8 C Michigan Apples, peeled & sliced
  • 1 T lemon juice
  • 1 C Pioneer® Sugar
  • ⅓ C flour
  • 2 tsp. cinnamon
  • 2 T Pioneer® Sugar

Directions

  1. Preheat oven to 350° F.

Crust:

  1. In a large mixing bowl combine flour and salt. Using pastry blender, cut in shortening until mixture resembles coarse crumbs. Add milk, stirring with fork only until mixture holds together; set aside.

Filling:

  1. In large mixing bowl mix together Michigan apples and lemon juice. Add Pioneer® Sugar, flour and cinnamon; stir together and set aside.
  2. Roll ⅔ of pastry into 16 x 12-inch rectangle. Place pastry in bottom and up the sides of an ungreased 13 x 9-inch baking pan. Trim edges evenly with top of pan. Spread apple filling evenly in the pan.
  3. Using remaining pastry; make lattice top crust. Seal edges, folding down pastry. Sprinkle remaining Pioneer® Sugar over lattice top.
  4. Bake about 1 hour 30 minutes or until pastry is golden. Cool slightly before serving with whip topping or ice cream.
 

Cook's Note

3 cans (20 oz. each) well-drained, unsweetened, sliced Michigan apples may be used in place of fresh Michigan apples. Increase Pioneer® Sugar to 1 ½ cups and bake 1 hour 15 minutes or until golden.
