Apple & Chicken Curry Salad

Ingredients

  • 1 ½ C plain Greek yogurt
  • 1 tsp green curry paste
  • 1 tsp hot madras curry powder
  • 1 tsp finely grated ginger
  • 1 tsp lime zest
  • 1 tsp salt

Sandwich Ingredients:

  • 4 roasted chicken breasts
  • 4 small Michigan Gala apples
  • 1 C red grapes, halved
  • 1/2 C julienned carrot
  • 1/3 C chopped scallions
  • 1/3 C shaved almonds
  • 2 C micro greens
  • 8 mini Tandoori baked Naan (total 14 oz.)

Directions

  1. Combine yogurt, curry paste, hot madras curry powder, ginger, zest and salt together; mix well. Set aside.
  2. Remove the skin and bones from the chicken breast and dice the meat; set aside.
  3. Core and dice the apples – do not peel.
  4. Combine the grapes, carrots, scallions and almonds together with the chicken and apples. Add the dressing to the mixture and mix thoroughly. Grill the naan for few seconds on each side to soften and warm.

Assembly:

  1. On one side of each naan place half a cup of the Michigan apples and chicken curry salad and top with 1/4 cup micro greens. Fold the other half over the salad and hold in place with a garnished decorative toothpick.
