Sweet Potato Pie

Ingredients

  • 1 ¼ C Pioneer® Sugar
  • ½ tsp. ground nutmeg
  • ½ T ground cinnamon
  • 2 eggs
  • 1 can (12 oz.) evaporated milk
  • 1 tsp. vanilla extract
  • 1 ½ C sweet potatoes, cooked and mashed
  • 1 9-inch pie crust, unbaked

Topping:

  • ⅓ C butter or margarine
  • ½ C Pioneer® Golden Light Brown Sugar, packed
  • ½ pecans, chopped
  • ⅓ C all-purpose flour
  • ½ shredded coconut
  • Whipped topping or ice cream

Directions

  1. Preheat oven to 425° F.
  2. In a mixing bowl blend Pioneer® Sugar, nutmeg and cinnamon. Beat eggs, add evaporated milk and vanilla. Combine with sugar mixture. Stir in potatoes, beat until smooth. Pour into the pie shell. Bake for 15 minutes. Reduce heat to 350° and bake for an additional 30 minutes.

Topping:

  1. In a bowl combine butter, Pioneer® Golden Light Brown Sugar, pecans, flour and coconut together. Mixture should be crumbly. Remove the pie from the oven, sprinkle with topping. Bake an additional 10-15 minutes or until topping is golden brown. Cool on rack. Refrigerate. Serve with whipped topping or ice cream.
