Sweet Dumpling Soup

Ingredients

  • 1 med. onion, diced
  • 2 stalks celery, diced
  • 1 lb. ground turkey
  • 8 C water
  • 2 T chicken soup base
  • 2 T roasted turkey gravy mix (Watkins)
  • ½ tsp. minced garlic
  • ½ tsp. dried tarragon
  • 1 tsp. parsley, fresh, chopped
  • ¼ tsp. nutmeg
  • 1 tsp. salt or to taste
  • ½ tsp. pepper or to taste
  • 2 T Pioneer® Golden Light Brown Sugar
  • 1 sweet dumpling squash; peeled, seeded, cut into 1-inch cubes
  • ¾ C quick barley

Directions

  1. Saute onion and celery with turkey until browned in a large soup pot. In the same pot add 8 cups water, chicken soup base, gravy mix, garlic, tarragon, parsley, nutmeg, salt, pepper and Pioneer® Golden Light Brown Sugar; stir to mix. Bring to a boil and add squash and barley. Let boil for 5 minutes and then simmer for 30 minutes; stirring occasionally. Serve with Cheddar Quick Bread (recipe found under Breads & Muffins).
