Summer Potato Salad

Ingredients

  • 8 med. potatoes (about 9 cups)
  • 3 hard boiled eggs, coarsely chopped
  • ½ C cucumber, diced
  • ½ C onion, chopped
  • ¼ C green pepper, chopped
  • 3 T diced pimento cooked, peeled and diced
  • 1 T mustard
  • 1 C salad dressing or mayonnaise
  • 3 T Pioneer® Sugar
  • 3 T vinegar
  • ¼ tsp. pepper

Directions

  1. In a large sauce pan, boil potatoes until done (do not over cook potatoes, you don’t want them mushy). Drain and peel skin from potato. Cut into cubes and place in a 5-quart bowl. Add eggs, cucumber, onion, green pepper and pimiento.
  2. In medium bowl combine mustard, salad dressing, Pioneer® Sugar, vinegar and pepper. Pour over potato mixture stirring until all is coated well. Cover and keep chilled until serving.
