Spectacular Apple Fruit Pie

Ingredients

  • 3 C all-purpose flour
  • ½ tsp salt
  • ¼ C Pioneer® Sugar
  • ¾ C shortening, chilled
  • ½ C butter
  • 1 tsp lemon zest
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1/3 C ice water
  • 2 tsp white vinegar

Filling Ingredients:

  • 2 – 2 ½ C apples, thinly sliced
  • 1 T lemon zest plus juice
  • 1 T vanilla
  • ½ tsp almond extract
  • 1 c fresh blueberries
  • 1 C fresh raspberries
  • 1 C fresh blackberries
  • 3 T cornstarch
  • 3 T minute tapioca
  • 1 tsp cinnamon
  • 1 ½ C Pioneer® Sugar
  • 2 T melted butter
  • 2 T sour cream

Topping Ingredients:

  • ½ C all-purpose flour
  • 4 T chocolate nutty granola
  • ½ tsp cinnamon
  • ¼ C butter, softened
  • 1 tsp orange zest

Directions

  1. Preheat oven to 350° F.
  2. Combine flour, salt and Pioneer® Sugar together. Cut in shortening and butter until crumbly. Mix all liquids (including the beaten egg) together and slowing add to the flour mixture. Roll out half of the pastry to fit into a 9-inch pie plate. Chill other half of pie crust.
  3. Filling: In a large bowl toss apples with lemon zest/juice, vanilla and almond extract. Add berries. Combine all other ingredients together in a bowl and add to the fruit mixture. Toss gently. Spoon into pie crust.
  4. Topping: Mix all topping ingredients together until crumbly. Sprinkle over pie.
  5. Bake for about 1 hour. Cool. This pie may be decorated with whipped cream and orange zest.
