Potato Chip Cookies

Ingredients

  • 1 C shortening
  • 1 C Pioneer® Golden Light Brown Sugar
  • 1 C Pioneer® Sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 C flour, sifted
  • 1 tsp. baking soda
  • 2 C potato chips, slightly crushed
  • 1 C nuts, chopped (optional)

Directions

  1. Preheat oven to 350° F.
  2. In a large mixing bowl cream together shortening, Pioneer® Golden Light Brown Sugar, Pioneer® Sugar and eggs. Add vanilla.
  3. In a separate bowl sift flour and baking soda. Add flour mixture to creamed mixture one cup at a time while mixing. Fold in potato chips and nuts.
  4. Drop by teaspoonful on ungreased cookie sheet. Bake for 12 minutes or until preferred done.
