Night-Night Cookies

Ingredients

  • 2 egg whites
  • ⅔ C Pioneer® Sugar
  • ½ C nuts, chopped
  • 1 C chocolate chips or butterscotch chips (or ½ cup of each)
  • 1 tsp. vanilla
  • pinch of salt

Directions

  1. Preheat oven to 350° F. Cover cookie sheet with aluminum foil; set aside.
  2. In mixing bowl beat egg whites and Pioneer® Sugar until stiff. Stir in nuts, chocolate chips or butterscotch chips, vanilla, and salt. Spoon cookie mixture onto prepared cookie sheet. Put the cookie sheet in the oven and turn off heat. Do not open oven until tomorrow or 8-10 hours.
