Ingredients

  • 1 ¼ C flour
  • ¾ tsp. baking soda
  • ½ tsp. salt
  • 1 C dates, pitted & chopped
  • ¾ C Pioneer® Sugar
  • ½ C shortening
  • ½ C water
  • 1 T lemon zest
  • 1 C chocolate chips
  • 2 eggs
  • 1 C water
  • 1 C pecans, chopped

Glaze:

  • 1 C Pioneer® Confectioners Powdered Sugar
  • 2 ½ tsp. lemon juice

Directions

  1. Preheat oven to 350° F. Grease a 15 x 10-inch baking pan; set aside.
  2. In a bowl add flour, baking soda and salt; stir and set aside.
  3. In a large saucepan combine dates, Pioneer® Sugar, shortening, water and lemon zest. Heat, stirring constantly, until dates soften; remove from heat. Stir in chocolate chips.
  4. In a separate bowl beat eggs. Add about a cup of the warm mixture to the eggs, stir and add all back into the remaining mixture; stir. Add flour mixture alternately with 1 cup water. Stir in nuts. Pour into prepared pan. Bake at for 25 minutes, remove and let cool completely.

Glaze:

  1. Mix Pioneer® Confectioners Powdered Sugar with lemon juice. Stir until smooth. Drizzle bars with sugar glaze. Sprinkle colored sugar and candied cherries if desired.
