Farmer’s Garden Pumpkin Cake

Cake Ingredients

  • 3 ½ C cake flour, sifted
  • 2 C Pioneer® Sugar
  • 1 C Pioneer® Golden Light Brown Sugar
  • 2 tsp. ground cinnamon
  • ½ tsp. ground ginger
  • ½ tsp. ground nutmeg
  • ½ tsp. all spice (optional)
  • 1 tsp. baking powder
  • 1 ½ tsp. baking soda
  • 1 ½ tsp. salt
  • 1 C buttermilk
  • 4 eggs
  • 1 ½ C vegetable oil
  • 2 tsp. vanilla
  • 2 tsp. rum flavoring
  • 1 can (1 lb.) pumpkin
  • 1 C zucchini, grated and loosely packed
  • 1 C carrots, grated and loosely packed
  • 1 C Michigan gala apples, peeled and grated
  • ¼ C golden raisins **
  • ¼ C raisins
  • 2 C walnuts, finely chopped (reserve ½ cup for sprinkling on cake top)

Frosting Ingredients:

  • 3 pkg. (3 oz. each) cream cheese, softened
  • ½ stick butter, softened
  • 4 C Pioneer® Confectioners Powdered Sugar
  • 2 tsp. vanilla
  • 2 tsp. rum flavoring
  • 2 T milk (as needed for desired thickness)

Directions

  1. Preheat oven to 350° F. Grease and lightly flour three 9-inch layer pans; set aside.
  2. In a large bowl, mix together cake flour, Pioneer® Sugar, Pioneer® Golden Light Brown Sugar, spices, baking powder, baking soda and salt.
  3. Add buttermilk, eggs, oil, vanilla and rum flavoring. Beat on low for 3 minutes.
  4. Stir in pumpkin, zucchini, carrots, apples, raisins and nuts. Pour into prepared pans and bake 30-35 minutes or until toothpick test comes out clean. Allow cake layers to cool fully before applying the cream cheese frosting.

Frosting Directions:

  1. In a small bowl beat cream cheese and butter until fluffy. Add Pioneer® Confectioners Powdered Sugar, beat until smooth. Add vanilla and rum flavoring mix well. Add milk if needed; mix.
  2. Frost layers, stacking as you go. After the cake is fully frosted sprinkle the reserved walnuts on top of cake (optional).
 

Cook's Note

For softer raisins soak in warm water for 1 hour.
