Apple and White Chocolate Muffins, selective focus

Dutch Apple Cheese Muffins

Ingredients

Muffin Ingredients:

  • 2 C all-purpose flour
  • ½ C Pioneer® Sugar
  • 1 T baking powder
  • 1 tsp. salt
  • ½ C butter
  • 1 ½ C cheddar cheese, shredded
  • 1 egg
  • ¾ C milk
  • 2 MED cooking apples

Glaze Ingredients:

  • ¾ C Pioneer® Sugar
  • ½ tsp. cinnamon
  • ½ C water
  • ¼ C butter
  • 1 T lemon juice, fresh

Directions

  1. Preheat oven to 375° F. Spray 12 medium muffin cups with cooking spray or use paper liners; set aside.
  2. In large bowl combine flour, Pioneer® Sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Add cheese and toss lightly to blend.
  3. In small bowl, combine egg and milk; add to dry ingredients. Stir just until blended. Fill muffin cups half full.
  4. Peel, quarter and core apples; cut into slices (from top to bottom). Press apple slices diagonally into dough with the rounded edge up. Bake 15 minutes.

Glaze Directions:

  1. In a small saucepan, combine Pioneer® Sugar and cinnamon. Stir in water, butter and lemon juice. Heat to boiling, stirring constantly. Remove from heat and allow to cool slightly.
  2. Remove muffins from oven; pour or brush glaze over each muffin. Loosen edges for glaze to run down the side of muffins under bottom. Return to oven; bake 10 to 15 minutes longer or until toothpick inserted in center comes out clean.
