Macaroni salad with mayonaise and vegetables.

Creamy & Sweet Macaroni Salad

Ingredients

  • 1 box (1 lb.) elbow macaroni
  • 1 ½ C mayonnaise
  • ½ – 1 tsp. salt (to taste)
  • ¼ C Pioneer® Sugar
  • 1 C chopped celery
  • 1 C chopped sweet onion (about 1 large)
  • 1 green and/or red bell pepper; seeded, chopped (optional)
  • ¼ C grated carrot (optional)
  • 2 T dried parsley flakes

Directions

  1. Scoop mayonnaise into a large bowl. Add salt and Pioneer® Sugar. Stir until well blended; set aside.
  2. Place a pot of lightly salted water on the stove to boil. Add in macaroni. Boil until pasta is tender, about 8 minutes. Rinse under cold water and strain once cooled.
  3. Add the cooled macaroni, celery, onions, peppers and carrots into the mayonnaise mixture; stir to mix well. Add parsley flakes and mix again. [If the salad looks like it needs a little more color, add in a little more parsley.]
  4. Store in refrigerator for a least 4 hours before serving, but preferably overnight. Give the salad another stir before serving.

Optional Additions:

  1. For a little more zing, add a couple of teaspoons of prepared yellow mustard to the mayonnaise mixture. You can also include more vegetables like cucumbers and peas!
