Crazy Good Casserole

Ingredients

  • 10 strips bacon, cooked & crumbled
  • 4-5 boneless, skinless chicken breasts
  • 2 cans cream of chicken soup
  • 2 C Monterrey jack cheese, divided
  • 1 box spiral pasta
  • 1 T garlic powder
  • salt and pepper

Directions

  1. Cook the bacon until crisp; drain on paper towels and crumble; set aside.
  2. Cut chicken into bite-sized pieces. Cook the chicken in the bacon drippings over medium-low heat. Add the garlic, salt and pepper; stir. While chicken is cooking prepare the pasta according to box directions.
  3. Preheat oven to 400° F. Spray a 9 x 13-inch pan with cooking spray; set aside.
  4. Drain the pasta and return back to the pot. Add the soup and 1 cup of cheese; stir to mix well. Pour into prepared pan. Top with bacon and the rest of the cheese.
  5. Bake 20 minutes or just until the cheese is melted and lightly browned.
