Ingredients

  • 1 pkg. (12 oz.) semi-sweet chocolate chips
  • 1 stick butter
  • 1 C walnuts or pecans, finely chopped
  • 1 pkg. (10 ½ oz.) colored small marshmallows
  • ½ C Pioneer® Confectioners Powdered Sugar
  • 1 C flaked coconut
  • Wax paper

Directions

  1. Melt the chocolate chips and butter together in a double boiler or in a microwave. Remove from heat and cool slightly.
  2. Fold in the nuts and marshmallows; mix until well coated.
  3. Break off 2 sheets, about 12-inches long each, of wax paper and sprinkle with Pioneer® Confectioners Powdered Sugar and coconut in the center. Pour half of the candy on top. Shape the candy into a log 1 ½ – 2-inches in diameter.  Sprinkle with more sugar and coconut if needed. Wrap in wax paper and chill. When ready to eat or serve, slice and enjoy.
 

**Cooks Note

If the chocolate mixture is too hot, it will melt the marshmallows, so be  careful to let the chocolate cool.
