Ingredients

  • 2 C flour
  • 1 tsp. baking powder
  • dash of salt
  • ½ C butter
  • 1 C Pioneer® Sugar
  • 1 egg
  • 1 tsp. orange zest
  • 1 tsp. vanilla
  • ⅓ C orange juice
  • 1 ½ C hazelnuts, ground
  • 1 ¼ C pitted dates, snipped
  • Blanched hazelnuts, toasted

Directions

  1. Preheat oven to 350° F. Grease cookie sheets; set aside.
  2. Combine flour, baking powder and salt in bowl; set aside.
  3. In a large mixing bowl beat butter on low for 30 seconds. Add the Pioneer® Sugar and beat until fluffy. Set mixer on low and add the egg, zest and vanilla; combine thoroughly. Stir in orange juice. Carefully add flour mixture. Stir in ground nuts and dates.
  4. Drop by rounded teaspoons 2-inches apart onto prepared pans. Place a whole nut on top of each cookie. Bake 10-12 minutes or when edges begin to brown. Remove to a cooling rack.
