Chocolate Fudge Cupcake with Raspberry Liqueur Filling

Ingredients

  • 1 stick margarine, softened
  • 1 ½ C Pioneer® Sugar
  • 2 eggs
  • 1 ½ C sour cream
  • 1 tsp. vanilla extract
  • 2 C flour
  • ½ C baking cocoa
  • 3 tsp. instant coffee granules
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt

Raspberry Filling:

  • 1 can Comstock raspberry pie filling
  • 3 T raspberry liqueur (Chambord)

Chocolate Glaze:

  • 1 C chocolate chips
  • 1 tub (8 oz.) Cool Whip®, thawed

Whipped Topping:

  • 1 pkg. (8 oz.) cream cheese
  • ½ C Pioneer® Sugar
  • 1 tsp. vanilla paste
  • 1 tsp. raspberry
  • 2 C heavy whipping cream extract

Directions

Preheat oven to 3500 F. Line muffin tins with paper liners (24 – 30).

Cupcake:

  1. Beat the butter and sugar until fluffy. Beat in the eggs, sour cream and vanilla. Combine remaining ingredients together. Add to the creamed mixture; mix well. Divide batter into paper lined tins. Bake 18-20 minutes or until cake tester inserted comes out clean. Let cool completely on wire racks.

Raspberry Filling:

  1. Mix together and let set while cupcakes are cooling. Scoop out center of cupcake and place 1 tablespoon into each.

Chocolate Glaze:

  1. Melt the chocolate chips in a small pan. Stir in the thawed cool whip; mixing together well. Drizzle over the filling of each cupcake. Refrigerate while preparing the topping.

Whipped Topping:

  1. Combine the cream cheese, sugar, vanilla paste and raspberry extract. On medium speed with electric mixer, beat until smooth. Slowly pour in the cream while beating. Whip until stiff peaks form. Pipe or spread on cooled cupcakes. Garnish as desired.
