Blueberry Muffins

Ingredients

  • ½ C shortening
  • ¾ C Pioneer® Sugar
  • 2 eggs
  • 1 ½ C blueberries
  • 2 ½ C flour
  • 2 ½ tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. nutmeg
  • ¾ C milk

Topping:

  • ½ C butter, melted
  • ¾ C Pioneer® Sugar
  • ¼ tsp. cinnamon

Directions

  1. Preheat oven to 350° F.
  2. In a large mixing bowl, mix shortening, Pioneer® Sugar, eggs, and blueberries.
  3. In a separate bowl mix flour, baking powder, salt and nutmeg. Add to berry mixture alternately with milk. Spoon in to coated muffin pan.
  4. Bake for 30 minutes. Remove from oven a cool for 5 minutes.

Topping:

  1. Mix Pioneer® Sugar and cinnamon together in a large open bowl (pie plate works best). Dip muffin in melted butter and roll muffins in sugar mixture.
