Ingredients

Cake:

  • 3 eggs, beaten
  • 2 C Pioneer® Sugar
  • ½ C vegetable oil
  • 2 tsp. vanilla extract
  • 2 C all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. salt
  • 4 C apples, diced & unpeeled
  • 1 C walnuts, coarsely chopped

Frosting:

  • 6 oz. cream cheese, softened
  • ½ tsp. vanilla
  • ¼ C butter or margarine
  • 1 ½ C Pioneer® Confectioners Powdered Sugar

Directions

  1. Preheat oven to 325° F.

Cake:

  1. In a large mixing bowl, beat together eggs, Pioneer® Sugar, oil and vanilla. In a separate bowl combine flour, baking soda, cinnamon, nutmeg and salt; mix into the wet batter. Fold in apples and nuts. Spread into a 9 x 13-inch baking dish. Bake 50 to 60 minutes. When cool add frosting.

Frosting:

  1. In mixing bowl, add the cream cheese, vanilla and butter; beat until smooth. Slowly add Pioneer® Confectioners Powdered Sugar. Continue to beat until smooth. Spread on cake cooled cake.
