Jicama Ingredients

  • 3 Michigan Empire apples, peeled, cored & cut like matchsticks
  • ½ of a large jicama, peeled and cut like matchsticks
  • ½ C carrots, cut like matchsticks
  • ¼ C diced green onion
  • 1/3 C Pioneer® Sugar
  • ½ C apple cider vinegar
  • ¼ C vegetable oil
  • 1 tsp. celery seed
  • ½ tsp. ground mustard

Sandwich Ingredients:

  • 1 ½ lbs. Salmon fillets, cooked
  • ¼ C butter
  • 2 T cayenne pepper
  • 2 T fresh dill, chopped
  • 1 C oyster crackers, processed to fine crumbs
  • 2 Michigan Empire apples, peeled, cored & finely diced
  • ¼ C roasted red peppers, chopped
  • 1 shallot, finely diced
  • 2 T red onion, finely diced
  • 2 drops liquid smoke
  • 3 T capers; divided
  • ½ C mayonnaise; divided
  • 1 ½ C Panko bread crumbs
  • 1 T olive oil
  • 8 sandwich buns, cut in half

Directions

  1. Mix the apple, jicama, carrots and green onion in a large bowl. In a jar with a tight fitting lid, mix the Pioneer® Sugar, cider vinegar, oil, celery seed and mustard. Shake well and pour over slaw mix; stir to mix together. Let sit for an hour to marry all of the flavors.

Sandwich Directions:

  1. Preheat oven to 350° F. Prepare fish by laying fillets in a 9 x 13-inch baking dish. Sprinkle with cayenne pepper and dill; dot with butter. Bake in the oven for 20-25 minutes; remove and let cool. Flake the fish into a large bowl removing any bones.
  2. To the fish mixture add crackers, diced apples, red peppers, shallot, red onion, 1 tablespoon capers and 1/4 cup mayonnaise; mix well.
  3. Heat the olive oil in a shallow baking dish. Shape fish mixture into patties and coat in the Panko. Continue until you have all 6 patties coated in the Panko.
  4. Heat olive oil in a shallow frying pan. Fry the patties until golden brown on each side.
  5. Mix the remaining mayonnaise with the remaining capers. On the bottom of each bun, spread 1/2 tablespoon on the each side of the bun. Top with fish patty and then ½ cup of the apple and jicama slaw. Add the top of the bun and secure with a skewer. Garnish as desired.
