Five-Layer Pumpkin Torte

Ingredients

Layer 1

  • 24 graham cracker squares, crushed
  • ½ C Pioneer® Sugar
  • ½ C butter, melted

Layer 2

  • ¾ C Pioneer® Sugar
  • 1 pkg. (8 oz.) cream cheese
  • 2 eggs

Layer 3A

  • 2 C pumpkin
  • 3 egg yolks
  • ½ C Pioneer® Sugar
  • ½ C milk
  • ½ tsp. salt
  • 1 T cinnamon
  • 1 envelope unflavored gelatin
  • ¼ C water

Layer 3B

  • 3 egg whites
  • ¼ C Pioneer® Sugar

Layer 4

  • 1 C (8 oz.) whipping cream
  • ¼ C Pioneer® Sugar
  • 1 tsp. vanilla

Layer 5

  • 1 C pecans, chopped
  • ½ – 1 C maraschino cherries, drained & chopped
 

Directions

  1. Preheat oven to 350° F.

Layer 1

  1. Mix together crushed graham crackers, Pioneer® Sugar and butter. Press into the bottom of a 9 x 13-inch pan.

Layer 2

  1. Beat Pioneer® Sugar and cream cheese together until creamy. Add eggs and mix well. Pour over graham cracker crust. Bake for 20 minutes. Remove from oven and let cool.

Layer 3A

  1. In a saucepan cook pumpkin, Pioneer® Sugar, milk, salt and cinnamon together until thick and bubbly. Remove from heat. Dissolve unflavored gelatin in water. Add to pumpkin mixture. Cool (place in refrigerator for 1 hour to cool completely).

Layer 3B

  1. Beat egg whites until they hold peaks then add Pioneer® Sugar slowly while blending with mixer. Fold into COLD pumpkin mixture. Spread on cooled cheese layer.

Layer 4

  1. Whip together the whipping cream, Pioneer® Sugar and vanilla until stiff peaks form. Spread on pumpkin pudding layer.

Layer 5

  1. Chop the pecans and spread evenly over the top. You can also chop some maraschino cherries and spread on the top for special occasions to make the dessert extra pretty. Keep refrigerated until ready to serve. Do not freeze. Keeps well for 2-3 days.
